Chicken Biryani
Biryani is most delicious or most wanted dish. It is mixed rice dish made with indian spices, meat/ vegetables, rice and sometime, in addition, eggs and potato. Its origin was from Persia, later Mughals brought it to India and made it popular in the Indian Sub-Continent. It is really very tasty food and can be serve at any occasion.

Ingredients of Chicken Biryani
for chicken
- 4 tsp vegetable oil/ ghee
- 2 onion (medium)(finely chopped)
- 2 tomato (medium)
- 1 cup curd
- 2 green chilli
- 2 tspgarlic paste
- 2 tsp ginger paste
- 1/2 tsp Haldi powder
- 2 tsp chili powder
- 1 tsp coriander powder
- 1 tsp Shaan biryani masala
- 5 gramsmint (finely chopped)
- 10 gramscoriander leaves (finely chopped)
- 2 tsp lemon juice
- 1 tspsalt (as per taste)
- 600 gram chicken
- for rice
- 6 cupswater
- 2 tsp 1 tsp lemon juicesalt
- 4green cardamom
- 4 cloves
- 1 stick cinnamon
- 1 teaspooncaraway seeds (sahi jeera)
- 1bay leaf
- 500 grambasmati rice
for grind
- 1fried onion
- 2tomato
- 1/2 cup curd
- 2 green chilli
- 1/2 tsp salt
How to make biryani
- Heat oil in a pan add onion, sauté till its golden brown. after that remove all the onion from the pan, keep aside.
- In the same pan add chicken ,add ginger garlic paste, sauté it for 2 minutes till color change.
- Now add haldi powder, chilli powder, Shaan biryani masala, 1/2 fried onion, salt (As per taste), sauté it for 5 minutes.
- Lower the flame, Now add grind mixture paste ( fried onion, tomato, curd, green-chilli, salt), cooked it for 10- 15 minutes, cover with lid. Add 2 tsp Lemon juice, chopped coriander leaves, mint.
- Turn off the flame, keep aside.
- Now take a deep pan, add 2 tsp oil, cardamon, cloves, cinnamon, bay leaves, caraway seeds, salt, 2 tsp lemon juice, add water to boil.
- Now add rice, cook till it 75% done. Drain all the water from rice, keep aside.
- For making layer, take a deep pan, add 1 tsp oil, add 1/3 rice, add 1/2 of cooked chicken, now 1/2 of rice and sprinkle 1 tsp oil, add all chicken, now add all the rice and sprinkle 1 tsp oil , some food color(orange)(color mix with 1/2 tsp lemon).
- Cover with lid, cooked it for 15-20 minutes on low flame.
- For Garnishing, sprinkle some fried onion and coriander leaves.
- Serve hot with Raita, papad.
